Tepache Sazón

Tepache = a Mexican drink, typically made with pineapple, water, and brown sugar and partially fermented.

I kid you not, while waiting for my street taco, I sat across from a guy name Sebastien drinking Tepache Sazon. I noticed that the description was in English so I started asking him what it was, etc. Long story short, he started the factory outside of the town of San Pancho. I got myself invited to his factory to learn about the process. In sum, it is a drink that is fermented and bubbly like kombucha but has 7% alcohol and no tea. The process of making it is like wine.
